By adding a variety of beans, carrots and peppers, this classic Summer salad gets a lift.

1 can kidney beans

1 can green beans

1 can yellow beans

1 can garbanzo beans

1 cup diced carrots

1/2 cup chopped green pepper

Drain all beans and combine with carrots and pepper in a large bowl. Add salt and pepper, one thinly sliced scallion, 1/2 cup sugar, 1/4 cup apple cider vinegar, and 1/4 cup oil, mixing well. Let stand overnight.
