This is my favorite way to enjoy squash blossoms. No need to coat the blossoms in batter—they are even better bare. Enjoy!

1 cup ricotta cheese

1 Tbsp. chopped basil

1/8 cup grated parmesan cheese

Ground pepper

10-12 large squash blossoms

In a small mixing bowl, combine cheese and spices. Carefully stuff each squash blossom with mixture. Drizzle olive oil in a medium saute pan, add half of the stuffed blossoms and pan fry, turning when brown. Repeat with the remaining blossoms.
