Looking for something new to try for Thanksgiving?

1 medium acorn squash

1/4 pound mild pork sausage

1/4 piece of a roasted red pepper, minced

3/4 cup fresh bread crumbs

Salt and Pepper

4 tablespoons maple syrup

Heat oven to 400 degrees Fahrenheit. Cut acorn squash in half and scoop out seeds and strings. Place in a baking dish and fill halfway with water. Roast, covered with foil, in oven for 30 minutes. Mix all ingredients except maple syrup and divide into open-faced squash cavities. Brush with half of the maple syrup and bake for another 15 minutes. Remove from oven and brush with the remaining syrup and bake another 30 minutes. Yes, this recipe takes forever, but it’s worth it.

Serves 2. Try using mini squash to serve 8 as a Thanksgiving dinner side dish. Cheers!
