These used to be called Yuletide Logs and shaped differently but we revisited them completely this year.
1 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1 c. margarine
1/4 white sugar
1/2 c. light brown sugar
1 large egg
1 tsp. vanilla
1 cup jam
Cream softened margarine, white sugar, brown sugar, egg and vanilla, then mix in flour, salt and baking powder.
Roll dough into long ropes, about 1/4” in diameter, then cut into 1 1/2” pieces. Flatten each small piece of dough, then top with a 1/2 tsp. of jam, spreading lengthwise.
Preheat oven to 350 degrees Fahrenheit. Bake ten minutes, remove from sheet and cool.
Footnote: Here’s the first version of these cookies. Upon further reflection, we decided to update the shape;)
