This is the perfect dish to make the star of your Easter table.

 

2-4 lamb loin chops

1/2 cup goat cheese

1/2 cup chopped spinach

1/2 cup bread crumbs

1/4 tsp. oregano

Cloves from one bulb roasted garlic

 

Mash the garlic in a bowl, and add the goat cheese, spinach, bread crumbs and oregano. Slice deep pockets on each side of the lamb chops, then stuff with the garlic cheese mixture, distributing evenly. Broil for 10-15 minutes, turning once. Serves 2-4 depending on appetite.
