Hiking with Chili

Yes, we are a family that hikes with chili. Here’s a basic chili recipe, perfect for heating over an open fire.

 

1 pound ground turkey

1 pound ground spicy Italian sausage

1 chopped white onion

One 15-ounce can white beans, drained and rinsed

One 15-ounce can kidney beans, drained and rinsed

One 15-ounce can black beans, drained and rinsed

1 can diced stewed tomatoes, including juice

1 can tomato sauce

8 cups chicken broth

2 tsp. garlic powder

2 tbsp. chili powder

2 tsp. parsley

1/4 tsp. salt

1/4 tsp. pepper

Shredded Cheddar, for serving

Chopped scallions, for serving

Place the ground turkey and sausage in a large pot and cook over medium heat until browned, adding onion until soft. Pour in the diced tomatoes and sauce, beans and spices. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.

Serve with shredded cheddar and chopped scallions.
