My version of the famous dish from Outerlands in San Francisco, this breakfast favorite is super kid-friendly, even with the kale.

Four slices of whole wheat bread

4 Eggs

Kale

Olive oil

Salt and pepper

Use kitchen scissors to cut out a rectangle in the center of each of the slices of bread. Toast bread to desired browness. Grease a frying pan, and place the toast with the hole cut out into the pan, heating until the surface is hot. Crack an egg carefully over each slice of toast, and fry until yolk is slightly firm. Sprinkle with salt and pepper to taste. Serve with the toasted center part of the bread on the side, as well as some sautéed kale. Enjoy!
