Our neighbor on the Love Farm, Lisa Combopiano makes this chip and dip favorite, also produced by Trader Joe’s.
This version combines a few recipes, to give it twist all our own. You can modify to create your own version.
3 cups corn nibbles, fresh or frozen, cooked al dente
1 can black beans
1 can pinto beans
1 small shallot, minced
2 tbsp olive oil
2 tbsp red wine vinegar
1/4 cup cilantro
1 tbsp minced jalapeño
Salt and pepper to taste
Mix all ingredients, and let marinade in the refrigerator for several hours. Enjoy with your favorite tortilla chips.
