Chocolate Mint Cookies

The yummy mint topping on these cookies make them a must-make for peppermint and chocolate lovers.

 

3/4 c. butter

2 tbsp. water

1 1/2 c. brown sugar

12 oz. chocolate chips

 

2 eggs

1/2 tsp. vanilla

2 1/2 c. flour

1/2 tsp. salt

1 1/4 tsp. soda

1/2 tsp. baking powder

 

2 boxes Andes mint candies

Combine first four ingredients in a saucepan over low heat, and cook until chips are melted. Pour into a mixing bowl and cool. Add eggs, one at a time, beating in, then add the dry ingredients. Chill dough.

Roll dough into small balls and bake at 350 degrees Fahrenheit for 10 minutes. Unwrap mint candies and cut in half. Remove cookies from oven and let sit on tray. Place a half of candy on top of each warm cookie, and let melt for a couple minutes, then spread with knife.
